"BWCB Goes to the Big Island"


Hello,



I joined the team for our adventure to Koh Larn for the recent BWCB Training on the Beach. What a great experience to have training on the beach while enjoying the island's beauty and the team spirit of Sheraton Pattaya. As associates of Sheraton Pattaya Resort, we have truly become a close family displaying both warmth and caring values to our fellow family members and not too mention our wonderful guests. The event brought me even closer to my fellow associates and has made me feel truly proud of the wonderful team that we have built at SPR. I will encourage more activities (out of the norm) that are both out of the box as we head closer to being "Best in Class". We will really do make the difference at Sheraton!

Thank you to Khun Ree and Khun Meth for this great initiative. Your simply the best!

Pattaya - A Travelers Paradise
Pattaya is nestled along a picturesque bay on the East Coast of the Gulf of Thailand, roughly 170 kilometers southeast of Bangkok. From a fishing village in the 1960's, Pattaya has emerged as the favorite Southeast Asian vacation center. A fascinating escape where tourists, holiday makers and vacationers from around the world unfold an incomparable array of possibilities to unwind during an exotic holiday beach vacation.


Unlike other beach resorts, where natural surroundings are used as magnets to attract tourists, Pattaya makes an all-out attempt to provide the best of everything. Here, everything means everything a tourist can imagine while on holiday: recreation, entertainment, sports, sightseeing and fun. To put it simply, Pattaya is a paradise for everyone, as it has a variety of attractions suitable for all types of visitors. This is the place where you can fill your day, from dusk to dawn, with endless activities, or you may choose to do nothing at all and relax.

The Past
Pattaya's name was originated from the march of Phraya Tak (later known as King Taksin the Great) and his followers from Ayutthaya to Chanthaburi just before the fall of the Ayutthaya Kingdom to the Burmese invaders in 1767.
When Phraya Tak's army arrived in the vicinity of what is Pattaya today, he encountered the troops of Nai Klom who tried to intercept him. When the two leaders met face to face, Nai Klom was awed by Phraya Tak's dignified manner and his army's strict discipline, thereby surrendering without a fight. The place where the two armies confronted each other was later called Thap Phraya, which means the Army of the Phraya. This was later changed to Phatthaya, which happens to mean the wind blowing from the southwest to the northeast at the beginning of the rainy season. Today the spelling of the name has been simplified to Pattaya.
For centuries, Pattaya was a small fishing village almost cut off from the outside world. But a big change occurred on 29 April 1961 when the first group of about 100 American servicemen who would join the Vietnam War arrived in Pattaya for relaxation. Soon, sleepy Pattaya became Thailand's premier and most successful beach resort, which annually attracts hundreds of thousands of pleasure-seeking visitors. A full range of accommodations from super deluxe hotels to bungalows and mini-pocket guesthouses replaced fishermens huts along the beach. Fishing vessels were adapted to become tourist boats and swimmers and sunbathers from various parts of the world frequented the quiet powdery golden beaches. Places of nighttime entertainment have also sprung up and are popular among international tourists.
The Present
Pattaya currently integrates the delights of a 1st class beach resort, city-like dining, shopping and night entertainment facilities with more than 300 assorted hotels, thousands of shops, restaurants and bars. In addition, there are an array of sports and recreational activities including beaches, golf courses, tennis courts, go-kart, gyms for working out, weight lifting and Thai-boxing gear. Pattaya offers a broad range of things to do. During the day, one may enjoy riding elephants or driving humble automatic mini-bikes, monstrous motorcycles, or even monster multicolored convertible Jeeps. Others go for shooting firearms, scuba diving and surfing, deep-sea fishing, speed boats, scooters, water-skiing, parasailing, or aerial sports such as gliding ultra-lights and flying motor-propelled gliders. On the other hand, at night, there are restaurants, bars, theaters, cabaret shows, night clubs, bowling halls, billiard & snooker clubs, discos, sauna & massage parlors, not to cite its absolutely incredible shopping which is available non-stop both day-and-night.
Pattaya Facts
This exotic beach resort welcomes approximately 5 million visitors a year. The friendly and hospitable Thai nature boosts its promotion, frequently bringing back the repeat visitors and constantly increasing the number of newcomers.
Pattaya city is located on the eastern coast of the country at latitude 13 N and longitude 101 E in the area of Chon Buri province. It is 147 kilometers from Bangkok and lies parallel to Sukhumvit Road on its east and the coastline on its west. Pattaya occupies an area of 208.1 sq. km. that is divided into 53.44 sq. kilometers of land and 154.66 sq. kilometers of islands and sea. Its coastline is 15 kilometers long.
Pattaya has a plain on the coast with some high mountains to the south. The area on the east slopes down towards the sea on the west.

F&B Connections "Chef Seng Phratamnak Cheese Cake"












สัปดาห์นี้ขอนำเสนอของหวานกันบ้างครับ ดูจากชื่อแล้วคงไม่ต้องบอกว่าของหวานจานนี้ถูกคิดค้นสูตรโดย “พี่เส็ง” Pastry Chef ของพวกเรานั่นเอง พี่เส็งเล่าถึงขั้นตอนวิธีการทำว่า เริ่มแรกด้วยการทำ Cheese Cake ด้วยการนำ Philadelphia Cream Cheese มาตีผสมกับ น้ำตาล Icing, เนย และไข่ไก่จนเข้ากันดีแล้วนำไปอบจะได้ Cheese Cake ที่เห็นเป็นสีขาวนวลของ Cake ดังในรูป

จากนั้นใช้ถั่ว Walnut อบและหั่นเป็นชิ้นเล็กๆมาผสมกับน้ำหวานกลิ่นเมเปิ้ล (Maple Syrup), เหล้ารัม (Dark Rum), เนย, เกลือ และไข่ไก่ คนรวมกันจนเข้ากันดี นำไปอบแล้วก็จะได้ส่วนที่จะนำมาทำเป็นไส้ตรงกลาง

ส่วนชั้นบนสุดนั้น เราจะนำผง Green Tea นำมาละลายกับนมสดเติม White Chocolate, ไข่แดง, Gelatin แล้วนำมาผสมกับ Whipping Cream

เมื่อได้ทั้งสามส่วนแล้วก็นำมาจัดลงใส่แม่พิมพ์ให้เป็นชั้นๆตามที่เห็นในรูป เวลาเสริฟก็ตกแต่งด้วย เกล็ดWhite Chocolate และผลไม้สด

ไม่ยากใช่มั้ยครับถ้าเพื่อนๆสนใจของหวานจานนี้เราจัดอยู่ในเมนู ELEMENT และ In Room Dinning หรือถ้าต้องการสูตรไปทำทานเองที่บ้านก็ลองถามไถ่ได้ที่พี่เส็งโดยตรง หรือจะสอบถามจากเชฟในครัว Bakery ได้ทุกคนครับ

This week we would like to introduce the dessert which create by “P’Seng” our pastry chef. P’Seng tell about the procedure of making cheese cake by mixing Philadelphia cream cheese with sugar Icing, butter and eggs until it’s well mix then put in into the oven and you will get a nice cream cheese cake.

Then use the walnut and chop it into small pieces, mix with maple syrup, dark rum, butter, salt, egg and stir all ingredient until it’s well mix then put into the oven and you will get the 2nd layer of the cheeses cake.

The top layer, we use green tea powder mix with milk, white chocolate, egg, gelatin and mix with whipping cream.

Then we starts placing all 3 layer into mole like the above picture, decorate with white chocolate and fruits.

It’s sound easy? This interesting dessert menu can be found at Elements and in room dining or you can use the above recipe to make your own cheese cake at home. P’Seng and Pastry team are welcome for any questions or advisory.

BWCB on the Beach

- a learning journey to “Emotional Connections” and “My Style” -


Introduction:

April & May 2007 - Sheraton Pattaya Resort prides itself in promoting the Sheraton Service Culture Training program by launching a new style of
learning scheme called “BWCB on the Beach” – a learning journey to “Emotional Connections” and “My Style”.

Lingering in our mind from “The Sheraton Brand” to “The Sheraton Experience” modules is our slogan “I make the difference, I am Sheraton!”. What difference can we make to create a unique and fun learning experience to our Sheraton Service Culture Training?

Aiming to make the difference to our associates’ learning curve, we want to go out of our way to connect them with the Sheraton Service Culture in a different, warm and comforting environment where their classroom turns into a beach and the lecture becomes a journey. Here starts the bright idea of “BWCB (Building World Class Brand) on the beach”.

BWCB Journey begins…

Our exciting BWCB journey starts at 8.20 am, from the beach in front of Sheraton Pattaya Resort, where Property Service Culture trainers, Department Heads and Associates gather and embark on a speedboat to one of Pattaya’s famous destinations; Koh Sak (Sak Island) and Koh Larn (Coral Island).

Amidst the bouncing journey over the blue sapphire ocean, key learning objectives of this trip are introduced to our associates. Namely, they will be able to understand “Emotional Connections” through the four components of Emotional Intelligence, so they will be able to identify how empathy can enhance workplace interactions, to understand what behavior increases or decreases emotional bank accounts and how to improve feedback skills.

At 9.00 am, our boat arrives at “Koh Sak” where the ice breaking activities are immediately brought in to the scene. The associates are informed of the rules and regulations and told to be ready to participate in various teambuilding activities – tasks that not come easily to the team, but ones that they must overcome to achieve the goals and at the end learn the key messages of their learning journey to “Emotional Connections” and “My Style”.

Hidden in those fun activities, associates will also discover their own and other’s Social Styles (Driving, Expressive, Analytical and Amiable). During the wrap up session, Property Service Culture trainers will help associates to identify key strengths, weaknesses and characteristics of each of the social styles and how to flex their styles to build relationships.

The learning journey continues…

Before departing “Koh Sak”, we divide associates into 2 teams considered to be a good mix of team members with different social styles. Each team is encouraged to brainstorm the name of their team and select the Team leader for the next activity.

At 10.00 am, associates leave “Koh Sak” to “Koh Larn” (Coral Island). The first assignment is “Treasure Hunts” – Each team has to seek for RC (Route Check) that contains questions from the “Brand Immersion” modules – “Loyalty beyond Reason” and “I am Sheraton”, as well as the first 2 modules from “The Sheraton Experience”“Everything Communicates” and “Signature Sheraton Service”. Each team must complete the task by finding the correct answer from the “Connections – My guide” textbooks. Each team will earn scores from the number of RC found and the correct answers to BWCB questions within the time limit.

The second assignment is “Emotional Mountain” - associates have to climb more than 200 steps to the top of the mountain under the strong sun. At this stage, associates are encouraged to express their emotions while observing others through their expressions under pressure (from the tiresome walking and hot temperature under the sun). When everyone reaches the top of the mountain, a wrap up discussion from the activities will be held. Each associate shares their feelings from the tensions during the mountain climbing and their observations of expressions of others. The trip facilitators will then link their discussions to the content of the “Emotional Connections” module.

The lesson from the activities will illustrate their situations at work where pressures could come in at any time. At this point, associates will learn the four components of Emotional Intelligence; namely, Self Awareness, Self Management, Social Awareness and Relationship Management. They will also understand how to control their behavior and how to carefully deal with others, so that they can create emotional connections with guests, colleagues and even their family members.

After these fun-filled learning activities, associates will be evaluated by a test and an open discussion. Thereafter a delicious lunch is served on the beach where rewarded leisure time awaits at the end of the “BWCB on the Beach” trip.

S2 - Delivering emotional energy to the eyes


“The story is about an old man who stood on a Virginia river bank many years ago. He was waiting to cross the river and, since it was bitterly cold and there were no bridges, he would have to "catch a ride" to the other side.

After a lengthy wait he spotted a group of horsemen approaching. He let the first one pass, then the second, third, fourth, and fifth. One rider remained. As he drew abreast, the old man looked him in the eye and said, "Sir, would you give me a ride across the river?"

The rider immediately replied, "Certainly." Once across the river, the old man slid to the ground. "Sir," the rider said before leaving. "I could not help but notice that you permitted all the other men to pass without asking for a ride. Then, when I drew abreast, you immediately asked me to carry you across. I am curious as to why you didn't ask them and you did ask me."

The old man quietly responded, "I looked into their eyes and could see no love and knew in my own heart it would be useless to ask for a ride.

But, when I looked into your eyes, I saw compassion, love and the willingness to help. I knew you would be glad to give me a ride across the river."

The rider was touched. "I'm grateful for what you are saying," he said.
"I appreciate it very much." With that, he turned and rode off.”
